Aunt Kay's Potato Salad
Ingredients:
5 lbs. Red Potatoes
8 hard boiled eggs
2 Bunches of Green Onions
1 Large Jar Hellmann's Mayonnaise
Salt and pepper
Directions:
1. Boil the eggs and cool.
2. Boil potatoes (leave whole w/skin on) for about 1 1/2 hrs. or until soft. When potatoes are done, drain water and let stand in pan until potatoes are cool (it may take an hour or more for potatoes to cool).
3. Peel potatoes and cut into cubes or thick slices.
4. Add cut up hard boiled eggs.
5. Add cut up green onions (One bunch of onions may be enough - use your own judgement).
6. Add the mayonnaise (I use the whole jar for 5 lbs. potatoes).
7. Add salt and pepper to taste.
8. Mix until potatoes are coated with mayonnaise.
9. Refrigerate overnight.
