Chocolate Sour Cream Cake
Prep. time: 30 minutes
Bake time: 40 minutes
Can also be made into cupcakes.
Ingredients:
1 - 13"x9" cake pan
1 3/4 cups cake flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups sugar
2 cups sour cream
2/3 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
Directions:
1. 15 minutes before baking - place rack in center of oven and preheat to 350°. Butter and flour a 13"x9" pan.
2. Sift the flour, cocoa, baking soda and salt into a large bowl, and stir in the sugar. Mix in the sour cream, butter, eggs and vanilla with an electric mixer on low speed. Increase to medium and mix for 3 minutes.
3. Transfer to the prepared pan and bake until a toothpick comes out clean -- about 40 minutes.
