Bonita Chicken and Veggies
3lb. of Chicken Boneless Breasts
Olive Oil
1 Celery Whole Stalk
2 Small Onions
2-3 Tomatoes - Fresh
Salt and fresh ground pepper
4 Chicken Boullon cubes (moist cubes of bouillon is better to use)
4-5 cloves of garlic
Parmesan cheese for later - when served hot
Noodles or Rice
In a Saute Pan...
1. Add Olive Oil
2. Cut-up chicken into cube. Add and fry chicken in saute pan until desired browness. Add 2 moist chicken bouillon for spicy extra flavor. Let it simmer and brown for about 10 minutes while turning.
3. Add salt and fresh ground pepper over chicken while frying. No need to drain oil from pan when chicken is well done.
In another Saute Pan...
4. Add olive oil, cut up pieces of celery, onions, garlic, salt, pepper, and 2 moist bouillon cubes. Steam for a few minutes
5. When steamed enough add sliced or diced tomatoes with juice.
6. Add chicken after it has browned to your liking.
7. Put heat on low and let simmer for 20 minutes stirring occassionally. Serve with noodles or rice.
Fried Noodles Recipe:
1. Use Prince Vermicilli Thin Spaghetti Noodles and fry with butter or olive oil (olive oil is best for this recipe). Add salt and pepper (do not use too much pepper). It takes about 5-10 minutes to fry, on medium, while stirring.
Serves about 3-4 people.
