Devils Food Cake/Cupcakes
for Batter...
1/2 cup Butter
1 1/2 cup Sugar
3 eggs
2 1/2 cups sifted flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3 squares unsweetened chocolate
1/2 teaspoon Vanilla
3/4 cup Sour Cream
for Fluffy White Frosting (used on cupcakes)...
1 cup sugar
1 stick Butter (unsalted), softened
1/2 cup Crisco
Pinch of salt
1. Take 1/2 cup of butter and 1 1/2 cup of sugar and cream together. Add 3 eggs, 2 1/2 cups of sifted flour, 1 1/2 teaspoon of baking powder and 1/2 teaspoon of salt to the cream and mix well.
2. Boil 3/4 cup of water and add 3 squares of unsweetened chocolate. Mix together and let cool. Add 1 1/2 teaspoons of baking soda and add to the above mixture. Mix well.
3. Add to batter: 1/2 teaspoon of vanilla and 3/4 cup of sour cream.
4. Baking Instructions: Divide batter into a 9x13" (or two 8") greased and floured pan. Bake at 375° for 45 minutes. Remove from oven and let cool.
for Fluffy White Frosting (used on cupcakes)...
1. Beat sugar, butter, salt and Crisco together until well mixed.
2. Heat 2/3 cup milk until hot, but not boiling (can heat in microwave for 1 minute on high). When hot add gradually to the sugar mixture, beating constantly. If you add the hot milk too quickly the mixture may become "watery" - but keep beating, and as it cools it will thicken.
3. Add vanilla to taste and mix in.
