Chicken Cacciatore
Ingredients:
5 Boneless Breasts
2 tablespoons Butter
2 tablespoons Oil
1/2 teaspoon Oregano
1/4 teaspoon Black Pepper
1 1/2 teaspoon Salt
2 Cloves of Garlic - put through a press or chop fine
1/3 cup Flour
1/2 cup White Wine
1 large can (16 oz.) Tomato Sauce
1 Large can Mushrooms (optional)
1 large or 2 small Green Peppers
Directions:
1. Add butter and oil to large frying pan and brown the chicken pieces. Set aside.
2. Mix flour with tomato sauce first, then add and mix other ingredients together in a sauce pan. Add chicken pieces and simmer on low for 40 minutes, covered. Stir often.
3. Serve with white/red rice or mashed potatoes.
