Mom's Meat Loaf
Ingredients:
2-3 lb. Ground Meat
Bread Crumbs
1 egg
1/2 pkg. onion soup mix
Barbeque Sauce or Catsup
Directions:
1. Take ground meat and sprinkle with bread crumbs.
2. Open the package of onion soup mix and stir it as best as possible (to mix every ingredient up). Slowly shake the onion soup mix on the meat.
3. Add 1 egg and mix up with your hands. Add more of any ingredient (not egg) if you like. If the meat is too moist add more bread crumbs to make the meat drier.
4. Shape into a small meat loaf and place in pan. Bake for 1-1 1/2 hour at 350°. After an hour check to see if it is done by cutting the loaf in the middle. If meat is a brownish color it is done.
5. Toward the end of baking time add barbeque sauce or catsup for added flavor.
6. Make vegetables, salad or a potato to have with your meal.
Will make 2 servings.

Suggestion: Cold meat loaf sandwiches on hot buttered toast are real good the next day for lunch or supper.
